Not so sure I'd be using that caliper with a 12.75" rotor.
I'm not overlooking this, trust me.
I want to get all the parts in front of me and see how it all lines up, which is easy because I work in auto parts. The contact patch for the 300ZX caliper on the 350Z track rotor is a little scary too, imo. My primary goal is to see if these calipers can be used with stock rotors and 16" wheels
What's the diameter of the stock 300ZX rotor? Is there a good online resource for this information that I have not found?

Well, first off, weight directly relates to performance.
Both unsprung (handling), and dead weight (acceleration).
The other thing is that aluminum dissipates heat quicker.
The weight difference is very little. However some more hard core individuals may think that a few extra pounds is too much. 4-5 lbs is less than the difference between different wheel and tire combos.
Yes, aluminum does dissipate heat quicker, but it's also weaker. Nissan discontinued the aluminum calipers sometime in '93 and they are becoming difficult to find. The iron calipers are still available, but they are a little on the expensive side.
