I would be more worried about variation in the readings, yours look really good to me. My motor tested 150 across the board but had it been 160 I would not have been worried.
Those things only need to be replaced if they are bad. The O2 sensor being the main one that could help HWY/cruise fuel mileage. The knock sensor will not help fuel mileage, just prevent Det. If the fan clutch was always driving the fan I suppose that would hurt fuel mileage some.

I have gotten 28 a few times on 400 mile road trips (actually have had more than 400 miles on the trip meter before deciding to fill it up) and have gotten as bad as 12 when I am purely driving the car hard. I would say my average is ~22mpg though.

Is the ring gear the same part number or different? I think I will likely use my ring gear and pinion since they have worn together thus far and my stock diff does not make any abnormal noise currently.
I am so confused, it sounds like it still runs for a little bit then dies? If it is running it is sparking? I would think having the TPS out of spec (not showing the ECU the correct IDL signal at idle) would cause poor idle which it sounds like you have.

If it started from push starting it is the starter. Check that you are getting power to the solenoid, and if you are I would check the solenoid since you are not even getting the click.
