Did you check to make sure the engine is not flooded with fuel? Make sure there is no fuel on the spark plugs! This problem happened to me and it ended up being wet plugs.
Put me down for a set of brackets and rings for the 300zx calipers using the 350z track rotors.
Also what year of 300zx turbo front calipers are needed?
Holy thread revival. Did you end up figuring out why you are lacking power? Is the turbo the problem? I am going to agree with annoyingrob and say GT4088
Do you have a confirmed working 1JZ ECU in the car? I know when my ECU took a dump it would sound like it would catch but it would not stay running for the life of me. I also wet fouled my spark plugs from all the cranking and that did not help the situation.
Refilling the overflow does not actually allow coolant into your radiator. My advice is to fill the overflow tank to the full line and then fill your radiator and bleed the system.
Check to see if the caps are leaking onto the board. It is a pretty common problem as 17 year old electronics due wear out over time. If you do have leaking capacitors I would suggest you send the ecu to Driftmotion and have him repair them for you.

What are your plugs gapped too? I am running NGK 6097's gapped to 0.025 and at 17 psi my plugs are getting blown out as well. I might need to upgrade to the HKS system as well.
I really enjoy the Targa and would not have it any other way. My best advice is wait for the right car to come along and you will NEVER regret that situation.
Driftmotion does carry the starter. BTW great job on getting the swap done 100%. I have seen my fair share of people running into problems after the swap is completed.
