Sounds like the temp sender unit or the temp gauge.

I had the same thing happen when my water temp sender went bad. Did you check to see if the engine was actually overheating? If it was hot enough the coolant overflow tank would boil. Could be a bad thermostat too. Also could be a blown head gasket. Any other symptoms besides the gauge?
