You should do a compression check. I would be surprised if you didn't damage something else when it overheated. If your head gasket is fine I would recommend retorquing the head bolts.
You should still flush the coolant.

Check the coolant level, thermostat, water pump. Check for coolant in the oil or oil in the coolant.
You should be reasonable sure that it isn't a blown head gasket before you turn the car on again, IMO.
