I dyno my car last year using the Mustang dyno and I did 294/309 @ 12 psi. Mustang dyno are typically lower and it is best for tuning. But @ 17psi you should be around 330...
I just got the 7m cooler installed, flushed the old Dexron fluid and replaced with Mobil 1 ATF. It's definitely an improvement over the stock power steering cooler. I also just ordered the Magnefine filter and will install next w/e when it comes in.

oh yeah that too. I got the stant 16psi cap, works great.
As for the heater core not sure bypassing it would cause the slow overheating you are describing. I'n not running hydrofan so I can't help you with that but others may. I didn't trust the stock rad and the hydrofan not saying it's bad...
if you have not replaced the t-stat i strongly suggest that you do it might be stucked closed and try to burp it again as already mentioned. also, are you using the stock rad, if so you may want to have it flushed really good to clean it so it will cool better.

It could also be the health or condition of the motor and the stock twins. My 1J is pretty healthy 175 compression across the board and I managed 294/309 at the wheels with just bpu at 12psi untuned.

JZA70 3" downpipe
3" intake pipe with AEM dryflow
dyno results (untuned) with no bc or sc at 12psi > 294rwhp and 309lbs torque

I would use Mobil 1 clean 5000 5w30 and drive it for 500 miles and then change to syn oil after. As for the tranny, use regular gl-5 gear oil and drive it around and then change with red line mt90.
I just switched to Red Line 10w30 in my last oil change after using Amsoil 5w40.
