Looks like most of the imprtant plugs are there. Those wires that are cut off could be for the Dash connectors - signals to you r gauge cluster etc. You can use the 7M Harness plug from an later 89 above MK3. That way you can wire in the plug and pin it so it connects to the dash harness. Not a...
