To support that kind of load without a support column, would probably require some sort of steel I-beam girder. You'll need to find someone like a Civil Engineer to figure it out. However; I doubt you're going to be able to "do this yourself with a friend or 2 helping".

The 7M is a DOHC engine. If you mill too much metal off the face of the head it changes the installed height of the head and alters the cam timing - that's one of the biggest issues.

I agree. Let it go. Sometime later in life, if you've got the funds and want to do a MA70 restoration, there will still be good examples out there. Or maybe something else will catch your eye between now and then. Parting it out is probably the most financially advantageous route, although...
