I thought the 1Jz ECU/TCU just ran a normal 340, no line pressure or anything different?
I can't say for sure as I've never had one but that's my understanding, electronic line pressure didn't come till later with the 343's.
And Yes 7M Trans Converter and 1J bellhousing should work.

Makes a little difference to cranking speed so it'll take longer to reach peak pressure for each cylinder, "even" is more important than the actual pressures, usually shoot for +- 15psi but 5>10 is about my limit.
Numbers are very low was the throttle open during the test?
Valve Stem seals stop Oil being sucked into the Intake ports and running down into the exhaust ports they have nothing to do with compression or lack of it ;)
I had an issue at High Boost/Rpm with a misfire, only thing I could nail it down to was the fine electrode gloplugging with IR's, changed to Copper it went away, as for the OP's broken plug I'd be thinking Detonation..
I ran an SSAC 321 header on my 7M, 0 issues or faults, ask if they supply an upspec in materials over they're garden variety Headers advertised on E-Bay..
Seriously Tall engine, guy here in Aus runs one in a early Crown Coupe and it just fits under the Hood... can't see it going in a Mk3 without laying it over and/or dry sumping it..
Deburr the hole and new copper washers.. shouldn't need sealant at all Dan, the Teflon's would work ok as long as you don't over tighten them they're mainly for use on plastic tanks.

If you'd seen the number of the "Good Guys" that have sold stuff here "For the Community" over the 10 or so years I've been a member that have gone on to lose the plot and end up ripping people off for rather large amounts of money you'd be thinking differently...
