Kenny - is your oil pump relief valve shimmed? Getting precise readings from the stock gauge is problematic - check at the stock gauge sensor location with a mechanical gauge.
Check and make sure all hoses are routed correctly - I assume you are using a NA stud with the PermaCool adapter?

Concerning the coolant system stop-leak products - use them if you really want to trash all your coolant passages. Including the block.
How about forgetting a quick fix that will just induce other problems and fix or replace the heater core.
As big as you can fit - the T-stat will handle flow through the cooler for proper temps. I prefer the stacked plate design...more efficient for the size, better flow, and less susceptible to FOD.

I've used Summit twist-tight hose/fittings and never had a problem with it...I did use the 3 barb AN type fitting vs the 2 barb NPT.
The Aeroquip fitting you linked to looks like a std brass barb...it's not push-lock...there is a difference.

Chris - if you are using the stock filter head to pressurize the cooler circuit, there is no way it (or the line to/from) can be responsible for a 20 psi idle pressure - the cooler relief valve doesn't open till ~40 psi. A blocked filter won't do it...
