Yeah they'd be flush. Look at BorHor's old posts and find his old car with n/a mkiv's and i think 25mm(~1inch) spacers. It looks gooood. Yours will look betttter.
I thought the shim buckets had to go back in the place they came out of in a used motor, hence, why everyone always seems to label them. This is just what I've heard, I could definitely be wrong (and probably am when I oppose a person like yourself)

There ARE "drift days" on the east coast. Tons of them. VIR, Summit Point, Englishtown New Jersey. Look up Drift Nirvana, Clubloose, to name a few venues.
And I hope you don't plan on using your car for drifting AND drag...
