For that build I'd consider keeping it as is. From a performance standpoint for racing or high horsepower, the stock system is pretty terrible. For a highway puller or reasonably normal driver, the stock system is fine, IMO. I ran the stock system for years, driving it hard over ~30k miles at...
I would ditch the pressure-based cooling system entirely before shimming it. It's a great, reliable system for power levels below ~350 whp, but problematic above that, IMO.
Shimming it would allow more pressure in the engine before cooling any oil. This is good for oil pressure in the system...
Printing would be expensive for the real parts, but that's a perfect application for printing a mold for carbon fiber!

As far as I know the knob is always black, but the boot was matched to the interior.

Available new from Toyota Japan, as far as I know. I recently got a quote from these guys: JP-Carparts.com. It was right around $100 shipped. I wanted the TRD one, but may settle for a new OEM.
FWIW, I had a Denso reman starter that would not engage the flywheel fresh out of the box. I couldn't figure it out, ended up returning it. I never would have expected that from Denso, but it was a good lesson in "just because it's new, doesn't mean it works."

Totally valid question. It is absolutely a less durable material than leather. It's main benefit to me is the feel. I've only driven a couple alcantara wheel cars and only through parking lots, but the feel is very nice. I also believe it'd be more comfortable to grasp in the summer...
Here's an example of some alcantara mk3 work on a car from Europe.
A few things I don't like that I would avoid:
1. Steering wheel center is covered. Ugly. Leave that as is.
2. Split wheel - alcantara and leather. I think it should be one or the other.
3. Door inserts look really plain...
