Upgrading Lines. What AN fittings do I need?

That's the thread pitch. You need a adapter with those threads and a crush washer to what ever an size your using.

Right ok. So the thread pitch stay the same, but I can use any size AN fitting I want with this thread pitch correct?

The thread pitch will stay the same for that particular piece. Difference parts have different thread sizes and pitches.

For fuel -6 should be plenty for you.

Alright, so I was going to place an order at Summit Racing for m12 X 1.25 fittings, but when I type it into the search nothing that I am looking for comes up.

What am I doing wrong?

That's probably just because that is the most common application for that fitting.
