If I want to turn the CSI outlet on the fuel rail into an 1/8 NPT for a fuel pressure gauge do I really have to buy three connectors?

I'm not worried about the price, it just seems excessive to have three different fittings, ya know what I mean?

I guess its not that big of a deal. I can't decide whether to do it this way or tee off my AFPR.

Retap your rail to whatever size fitting you want to use. (that will fit of course.)

I'd check with a local fitting store like Parker, and see if they have anything that will allow you to T off of that fitting somehow. (Like a duel banjo bolt, and extra banjo fitting with AN or NPT end.)
