Change the engine oil right before you park it. Combustion byproducts that end up in the oil can be corrosive over time and fresh oil will keep that down to a minimum. Oil has corrosion-inhibitors in it that get used up. Same goes for the coolant. Fresh coolant would be good.
Some gas dryer would be good, and expect to get new gas before you go too far. I'm not sure if you should leave the tank almost empty or full. Probably almost empty.
Remove the battery and expect to buy another one unless you have a good maintainer, NOT a trickle charger.
If possible, put it on jack stands to get it off the tires. Put covers on the tires intended for the purpose to keep them from dry rotting from UV light and ozone. An RV supply will have some. Let out most of the air from the tires.
If possible, I'd keep the windows open a bit to keep the air inside from getting stale. A cover would be nice, but not in a windy environment, or the cover will abrade away the wax, then the paint.
Check regularly for rodents living on the engine. They love to chew on the plug wires and stuff, as jtamulis said.
Before restarting, I'd disconnect the coil (but let it spark to the block) and crank the engine for 30 seconds to get the oil flowing.
