i put in valvoline 30w for the first 500 miles im about to do an oil change could i use 40w ? there out of 30w

in germany we drive with Castrol 10W60 fully synthetic oil!

yes...in a fully rebuilt engine..it is not a problem for this...the first 1000km you drive normal and not under boost.
So can the pistons and the rings good works in the engine.
And for the Turbo is this oil the best....high resistant for temperature and pressure.

You already drove 500miles right? You might just want to switch to 10w30 dyno for the next 500 before going to synthetic instead of running straight 30w. If after 500 miles your rings havn't seated than i dont think they will.

Go 1500 miles. You can use a 10W-30 non-syn oil.

After your first 1500 like Jdub recommends I'd go 0W-30 or at most 5W-30, Read the link to see what you want is 10psi for every 1000rpm. Read what the Supramania Moderators recommend.
