What I understand is that the HVAC unit is the servo/motor unit that controlls cabin airflow, and the motors are controlled directly from the head unit (with all the buttons, like the stereo head unit I assume)??

Yes where the buttons are, there's an amplifier circuit inside that sometimes fails for whatever reason and as this controls the mixer door servo you can have a perfectly functioning heater tap and vsv but still have cold air, even cable tieing the heater tap doesn't fix it.
The 2nd Amplifier is for the AC and is the blue box above the dash but has nothing to do with Heat.
