So I found some mayo under my oil cap on my 1JZ, the is none on the dip and the coolant seems fine... The car hasn't been properly used since before Christmas and we had a lot (car was completely covered in snow), since then its been fired up a few times to move it but no actual run. Any chance it could just be condensation?

I had the same thing happen, once I started driving it alot it never did it again.
I also did some test just to make sure as well. Check for exhaust gas in rad, compression test, and oil sample sent to a lab. All test were good!

It's the short runs of the engine that build up crap on the oil cap. If I were to just start my car for 5min then let it cool and repeat that it will build up white crap.

This is common for vehicles that are driven very short distances. The valve covers are cold so they gather condensation the same way a glass filled with ice water will on a warm, humid day. If the engine doesn't have a chance to get up to operating temperature for at least a few minutes, that condensation will not go away. It's basically just oil foam. It probably looks like chocolate mouse, right? Take a 20 mile trip every day for a week and it should go away. Also, it should really only manifest in the cooler times of the year.

Changing your oil will make no difference. Just to be on the safe side, like said above, take a sample and let it sit for a while. If it separates, you have a problem. If it doesn't, you know its just condensation.
