falling temp gauge on accerleration

so my radiator had a leak and because hpf had the radiator plus the next one they offered me on back order it took longer than expected to get my new one (had to borrow one from a friend) and now when i accelerate the temp drops immediately any ideas its an 88 turbo manual mostly stock just put in a mhg and arp studs maybe 3000 miles ago

i had the same problem just yesterday.. i changed the thermostate and it stoped. im real new to this but just thought i would share my part and see if maybe it helps ya.

Had that happen to me before, change out the coolant temperature sender (on coolant neck with one wire terminal) When it gets old and after a few removal/install of the wire it can cause the temp gauge to be faulty at times, and yes the dropping down to C when accelerating and going back up after letting go
