I think for your goals the stage 2 would be the best choice. AFAIK the stage 2 and 3 use the same PP but the stage 3 is a 6 puck disc and the stage 2 is a full faced kevlar disc. So the stage 2 makes for smoother engagment and longer disc life, as well as holding up to 460 ft.lbs. (Stage 3 is rated to 520 ft.lbs)
As far as the PP fingers being upgraded...I don't think thats true. My PP that came with my Spec stage 2 kit has Toyota stamped on it just like any PP would from the factory. The only difference is that it was painted blue. I didn't notice any difference in pedal pressure so I am inclined to believe that there is no difference.
