I'm not going to debate what's "better" -- however coolant provides:
Higher boiling temps
Anti-corrosion protection
Lubrication for your water pump
Those are reason enough to run some form of coolant (be it water wetter or an antifreeze compound) in the system.
On my road course car (the MKIV hardtop) I run water wetter in the summer and Toyota Red in the winter (both with distilled water).
