Update: Whilst doing other things i found that the spot where one of the vacuum hoses connects to the thermostat was broken and left open. I plugged it for now, but i'll be fixing this first .
But do i have to replace the whole thermostat, or can i just order the part where the vacuum lines connect?

This sounds very similar to a problem Ive been having. I have an 89 Turbo that I got less then a month ago, and it does this. In my car I had to replace the fuel pump before I could drive it and it had been sitting for a while. I was thinking injectors in my car may be fouled because who knows what gunk was pumped by the old pump after it went out. Im going to test my BOV tonight when I go home and see if I have any codes.
