how much boost can you run on a 7mgte with a hks 1.2 metal head gasket with out having to add anything or blowing anything up? thx

That's a very tough question to answer.
Given that all is well with your engine, your headgasket replacement, etc... You should be able to get away with 10-11 psi. You'll start to run in to fuel cut around there also.

But I can get away with 7 ish pretty good right? I'm only asking just for some fun with the motor before I put a 1j in it

put a FCD and an MBC, crank MBC, watch boost gauge, listen for large bang, watch for smoke, buy 1/2j...
