I'd bet that the issue is where the wire connects to the sending unit. It's a relatively easy fix, disconnect the wire, pry the contact up with a small screwdriver, clean, and re-connect. I get nervous when my oil pressure gauge reads zero. (After installing my motor, I was very concerned, since it would do as you describe. It was well worth the peace of mind for a quick fix.)

A better gauge is of course better, but it's a good thing to at least have the stock unit working.

I was just wondering if it was an urgent fix because its my DD and I don't have the money at the moment.

honestly i wouldnt drive it until i know what my oil pressure was
i dont think you want to be stranded on the side of the road with a blown motor lol

your oil pressure is evedently ok now since it still runs
but what happens if the oil pump goes out
its more of a piece of mind gauge lol

Well I discovered the issue to not only the oil gauge not working very often but also all the electrical issues I've been having. A power cable going from the positive of the battery was so horribly corroded that the wiring was practically dust. Cut away the bad wire today and replaced with new wire and everything is great. The Oil Pressure gauge, to my delight, was working like it should. I'm usually reading between 20-40psi, and it only hovers right above 0 when I'm like in 5th gear cruising at low rpms.

Sadly I'm moving to NV in 2 and a half months and I doubt the old girl will make it. My buddy is offering to trade his 97 Jetta GLX for it. Its still a 5-speed, and he's driven it from Alabama to Ohio, back, then to Texas and back with absolutely no problems. He also gets over 30 mpg interstate with that VR6 lol. I figure I can just sell it when I get to NV and get an 89+ model MKIII for around 3k. It'll undoubtedly be less of a hassle than my old 88. While the engine itself has never given me issues, the body needs paint and bump guards. The taillights need to be updated to 89+, and the dash needs replacing along with a new AC compressor and heater core. So I think this trade will be for the best.
