When you lower a Mk3 you get to a point where you run out of adjustment and can either have correct Camber (wheel is 1 degree or so from vertical) or correct rear Toe in (rears are a bit pidgeon toed so the wheels form a V towards the front of the car) NOT both at once.
You want to go wider on the rears and were asking about rolling, When you correct the Camber the top of the tire will be closer to the Lip.
Only way I've found to correct this problem was to lengthen the Lower Transverse arms 15mm each, this puts all the adjusters back in the middle of their range with a low car.
