i was doing some research i came across something about wiring a gm map sensor in place of a toyota one. has anyone done this and if so wat bar sensor would you use for a stock 1jz

First off, I believe the 1jz map reads more than 1 bar of vacuum. Under actual testing it appears to come out as going up to 1.2 bar of boost or 17.5psi.

You need to find a sensor that can match those specs but with a wider range if you want to fool the stock ecu. Stories have been floating around about a denso 3 bar that is drop-in, which makes sense since the stock units are denso.
The gm sensors would take more work I imagine. You could probably get the car to idle on one but I doubt it would perform well without some additional electronics.

If you use something to control fuel, will it work, or is the voltage range way off. I would be looking to use a GM 3 bar, so I can see something over 17 PSI, and possibly make use of my turbo. Both are 3 wire sensors, and I believe they read on the same voltage range (0-5v)

The GM 3 bar reads 0psi as 1.8v and the Denso sensor reads it as 2.6v. Both sensors read 0-5v sure, but on completely different scales. The ECU will be adjusting timing/spark/fuel based on completely wrong information.
