I'm new to tunning and was wondering where could i get info on tunning and how to tune w/ a safcII?

i like to start off with low boost and rich...then adjust to preference ie 11.5/1 air fuel ratio....go wide open throttle in 3rd (where i do my tuning)...then increase boost steadily and make sure it stays the same....i dont really rely on this though..i see 11.XX air fuel ratio during wot the whole way...but the aem uego cant replay data so i could hit a small lean spot and dont know. i just dont drive hard at all... a quick dyno run should reveal how its really doing. cheap and good insurance.
i was thinking about 12.XX a/r tuning in 4th gear at wot w/ 10 psi then bumping up after clutch is broken in. does it matter what gear to tune in? i thought tuning is suppose to be tuned in the gear closes to a 1:1 ratio? what should the a/r's be for daily driving? 14.XX's? and how do i adjust my cam gears?
