Are you getting 4 new rims all around the car, or 2 new rims just for the drag radials?
I currently run 245/50/16 Nitto 555r extreme drag radials on the stock 16" five star rims. Not really good pics, but you get the idea.

you can fit up to a 28x11.5 on a rx7 fd rim Under the MKIII chassis..

Edit* (you might need coil overs to fit that width.)

I wouldn't run 18's on the rear if you intend on actually using it at the strip.

This.

Drag radials you want a fairly substantial sidewall so the tire can flex/twist to get that extra bit of surface area and grip on launch, especially when running lower tire pressures.

Most of your braking power happens at the front of the car as well. If the rears were applying the same force, they'd lock up due to the weight transfering forward leaving much less to push the rear tires down. That's why rear brakes are so much smaller than fronts, they just simply don't need to be as big. I would hope you could get a 16" rim over even a big brake kit for the rears.

Its a bit extreme but it illustrates the point of not wanting low profile tires when launching, basically since the sidewall is so short and stiff it has next to no room to twist so if you don't get immediate traction off the line you're just going to wheel spin until you let off the gas so it can hookup.
