I just wanted to double check and make sure everything is wired in properly before I do a full engine warm-up on a rebuilt engine to avoid any type of overheating. Feel free to correct any mistakes I have made. I know this setup works fine its just been awhile since I wired it up.

I noticed my thermostat relay has a little control knob on it..Im guessing its for the temp settings 180F-230F???

The probe for the relay is right below the upper radiator hose on the front of the radiator, I have the signal wire spliced into the radiator cooling fan sensor switch wire and the relay itself is grounded.

Here's a couple pics of the T-stat Fan Control Relay

www.flex-a-lite.com/auto/31147-99936.pdf will help you. yes the knob is for temp settings. you can follow that pdf diagram for wiring. i don't wire it that way though.

you can test it out by heating the prob with the ignition switch on (car not started). if you wired it correctly, the fans should turn on once the temp reaches the temp you set the thermostat switch at.
