A good practice I've been told will keep the smell from occuring is to run the fans with the A/C off before turning the vehicle off. Not sure if it is any good to you once the smell has really started though.

Mold in the evaporator. You can buy a product made just for the problem but spraying Lysol into the fresh air inlets should clear it up. Check to sure the evap enclosure drain is clear too...
