Intake & exhaust valve clearance shims

I overhauled my engine(240,000 kms) myself but I had the head overhauled by a local company. Once the engine was fired up it was running rough & would shut off. 8 out of the 24 valves weren't set correctly. I currently have all but one intake valve clearance within limits. I have been told by the local dealer that the smallest shim size is 2.50 mm, I calculate that I need 2.45 mm. Does anyone know if the shims can be ground, and if so how much can come off the shim? I really don't want to pull the head again. Thanks.

Normally, when a valve has been ground so much, that you run out of adjustment,
the tip of the valve stem is ground back a ways.
My valve grinding machine has an attachment on it, just for shortening the stem.

The guy who ground your valves should have done this...........
