Identifying Head.

I've got a rebuilt 7M head that I plan on using in my rebuild. Not sure on the history of it though. How do I tell if it has been machined before? Will a machine shop be able to tell this? and how will I know what thickness of a HG to use?

Machine shop can measure it and tell you how much has been taken off. Whatever has been taken off you try to replace with a thicker HG (assuming you're going with a MHG). Being off a little bit is no big deal, but you want to try to keep it close to stock compression.

heh, apparently my humor today is lacking, as was already made apparent in another thread, so I'll just let the perverse minds of others take my place :D
