Extreme oil pressure!!!!

Rebuilt motor, shimmed oil pump 7.5mm, Arizona performance oil pump feed line, larger B&M cooler with -10 lines, remote filter adapter mounted on block with -10 lines running to filter mount. Filter mount has Earl's sandwich plate oil cooler adapter with built in thermostat then filter on top of it. Started the car PSI went max on gauge, mechanical only goes to 100, calmed down a little took it for a drive using break in advice from the oil thread on here, straight 30w, when it warmed up it went down to 40 PSI at idle. Changed the oil took it out again and it wouldn't go less than 100 PSI, top end sounded loud and the oil cooler didn't have any warmth. Took out sandwich plate thermostat and just ran no cooler, 5w-30, WIX filter, and still 100 PSI. Tested thermostat in water and it opened all the way just before the water boiled, the whole mechanism does move around in there when you shake it though.

So that's the story, any input? Also I drove maybe 4 miles at that oil pressure extremely slow, that's all that is on the motor, should I worry about the bearings?

Switched lines around for filter head and the pressure went to 95 then started dropping soon after. Tested thermostat in water and it opened all the way just before the water boiled, but the whole mechanism does move around in there when you shake it. Now do I just wait for a new thermostat from summit? or do I run it?

Thermostat is going to be a 90/10 unit and shouldn't affect pressure in any way unless you have plumbed it as a bypass and not a full flow, describe the plumbing please.

Well it is on of the sandwich style ones. So it goes from the to the filter head and back, filter head has thermostat screwed on the filter on that. I know it shouldn't affect pressure I'm just wondering if I should get a new unit because this one makes noise and moves around when you shake it but it didn't do that before.

BTW the reason the filter head was plumed backwards was because they had the in and out arrows marked wrong. Earls performance part #2178ERL, called Holley tech assistance and they didn't even have an info sheet available. Wouldn't like to see this happen to someone else, proper inlet on this part is the port closest to the center. Also Summit is just gonna exchange my thermostat no big deal just need to wait for cross borders shipping.
