does anyone know if doing this would harm the iPod in anyway? because im defragging it right now...but im kinda worried that something might screw up.

Think of it as a messy room. When you clean, or defragment it, you put everything in its place nice and neat and you always throw out a thing or two(the few kilobytes you free up). The result is you can work in your room easier cuz everything is where i should be, just like a harddrive functioning more efficiently.
As for defragging your ipod, it'll probably speed the menus up, but not by much. What i did to get more space in my ipod, i took out the ol' 40gig harddrive in there, and swapped in a 60gigger:icon_bigg.
