couple things to clear up...

Should finally have my short block back from machine shop soon.VERY excited... So I have been cleaning the piss out of everything and getting all the little parts, hoses, gaskets and bolts ready to start reassembly. I have a couple things that came up when I was getting everything ready...

1.) I got my reman head from CCH in Florida. Came with na cams and everything set to spec, I double checked everything and it was right on. The finish on the head is awesome and mirror like, however the water jackets are all scarred up and are not uniform will this cause any problems down the road? ( not entirely sure which head gasket to pick up yet I was waiting to see how much the machine shop took off block, but will be metal)

2.) The previous owner installed an ACT stage two clutch of some sort, its almost new, but I know nothing about clutches but my flywheel needs to be resurfaced so do I need to do anything else to the clutch, pp, or anything else to accommodate for the amount taken off the flywheel?

That's enough for one thread...I'll ask more on my build thread when I get some more pics of the real progress to start one...thanks!

1. Take some pics of the head and post them. I think you are referring to pitting around the water jacket openings. This won't be a problem as long as they are not large enough to compromise the seal.

2. No, nothing special needs to be done. If the flywheel has a step (don't remember if the 7m flywheels do, I am pretty sure they do), they will resurface the friction surface as well as the mounting surface to retain the factory step. Nothing has to be done to the clutch disk or pressure plate and it will still have the same amount of clamping force as long as the flywheel is machined properly.

The head that I was going to run had serious erosion around the water jackets, and I decided to toss it.
Like CyFi6 said, make sure the erosion doesn't reach as far as the water jacket seal.
The only thing clutch-wise I might suggest is to consider replacing your throwout bearing's conical washers. They tend to flatten with regular use,
and will cause some extra freeplay(slop) in the engagement/ disengagement.

Yikes...now I wish I had a pic right now. Won't be able to get to the shop until Friday but will indeed post them to this thread because Im not going to install it until I know for sure its OK. That way they have to honor my warranty.

By water jacket seal u mean if the water jacket openings in the head are scarred up to make them wider in spots than the water jacket holes on the headgasket will be right? That's the only way I could see coolant or gases getting through, but then again I have no idea.
